Herb Quitatta
This delicious and healthy recipe is a combination of quiche and fritatta - thus the name quitatta. Actually, it's more like a frittata than a quiche since it is not towering or particularly fluffy and it doesn’t have a flaky crust like the typical quiche. Instead it is much lighter that a traditional slice of quiche. It is also quick and simple and it is loaded with healthy herbs and veggies. All in all, a great brunch dish. Note that you can make it meatless or use the optional bacon or ham (just be sure to get additive free and preferably organic meat for the healthiest recipe).
