Perfect for "Meatless Mondays", here is a tasty and healthy all vegan dish you can whip up with the ingredients listed or just about anything you have on hand. It has a mild ginger flavor which can be enhanced according to taste and is filling, yet light on the stomach. Try serving over steamed jasmine rice and try substituting tasty and healthy peanut oil for the olive oil.
