Granny's Gluten-Free Healthy & Delicious Fruit Cake
This delicious recipe comes courtesy of my good friend at FaceBook, Granny Good-Food (with the the wheat flour being substituted for with coconut flour or gluten-free all purpose flour).
Says Granny: "I am the one who LOVES fruitcake! But it is so expensive and really hard to find a good one (I see those knowing smiles), plus it takes forever to ripen and soak up all the brandy or rum or whatever alcohol is used, and I'm not too keen on that flavor. Maybe I don't love the fruitcake so much as the fruit and nuts? (Hey, I "am" from California, remember).
"So what to do? Make my own. "
Which she did by taking a basic carrot cake recipe and loading it up with 3 kinds of nuts, 3 kinds of seeds, dried fruit. and no sugar.
