Chickpea and Butternut Squash Fritters with Field Greens

This vegetarian entrée features the perfect combination of butternut squash and chickpeas and many other healthy ingredients. Aso included are recipes for a yogurt dill sauce and salad dressing. Legumes like chickpeas pack protein and the B vitamin folate, and winter squash is rich in carotenoids, a group of phytochemicals.
