Broiled Haddock with Mango-Lime Salsa

Broiled Haddock with Mango-Lime Salsa
Haddock is a popular and healthy low fat cold water fish with clean white flesh which is found on both sides of the Atlantic Ocean. It is an excellent source of dietary protein and also contains a good amount of vitamin B12, pyridoxine, and selenium as well as a healthy balance of sodium and potassium.
This extra tasty haddock recipe also contains such healthy items as mango, bell pepper, green onions and olive oil and is sure to please any fish lover.

Ingredients:

1 large ripe mango or 1 10 oz. bag frozen mango thawed and cut into bite-size chunks
1 red bell pepper, seeded and finely chopped
¼ cup thin chopped green onions (excluding leafy green stems)
3 Tbsp. lime juice (about 2 limes)
2 Tbsp. extra virgin olive oil
4, 4 oz. haddock fillets

Instructions:
1. Place chunks of mango, red pepper and green onion in a medium sized bowl. Add 2 tablespoons of lime juice and the olive oil. Let marinate for up to 1 hour. Makes 2 cups.
2. Preheat the oven’s broiler setting to high. Place oven rack roughly 3 inches from the heat source. Line broiler pan or rack with aluminum foil and spray foil with nonstick cooking spray.
3. Place fish on foil, spraying both sides with cooking spray. Pour remaining lime juice over fish. Broil 3 minutes on each side, or until cooked through.
4. Top with mango salsa and serve.

Makes 4 servings.

Cauliflower and Chickpea Curry with Potatoes

This spicy curry provides just enough heat to help you make it through the end of winter. Cauliflower is a cruciferous vegetable and, like broccoli, is an excellent source of folate, a B vitamin. Folate promotes heart health and helps prevent certain birth defects. It's also necessary for DNA production and repair, which helps lower cancer risk. Curries contain a variety of spices like turmeric, coriander, cumin, ginger and Cayenne pepper which have wonderful health benefits. For example, turmeric gets it characteristic yellow hue from a class of cancer-fighting compounds referred to as curcuminoids. The most abundant of these compounds is curcumin, which is being studied for its anti-inflammation properties.

Changing up the combination of spices and their amounts allows you to adjust the heat from mild to super spicy. Chickpeas add protein, making it a meal, especially when served with brown rice.

Ingredients:

4 cups bite-size cauliflower florets
1 medium yellow-flesh potato, peeled and diced (roughly 1 cup)
1 cup fat and MSG-free, reduced-sodium chicken or vegetable broth, divided
1 cup sliced red onion, cut in thin crescents
3 garlic cloves, thinly sliced
2 Tbsp. curry powder, hot or mild (add more or less to taste)
3 cups chopped green cabbage, in 1/2-inch strips
1 (15 oz.) can chickpeas, rinsed and drained
1 cup frozen cut green beans
3/4 cup reduced-fat coconut milk (preferably organic)
Sea salt and ground black pepper
4 hard-cooked eggs, halved, optional, for garnish (preferably free-range organic eggs)

(As always, for the very healthiest versions of any recipe choose organic content as much as possible.)

Instructions:

1. In medium pot of boiling water, cook cauliflower and potatoes for 3 minutes. Drain, and set aside.

2. In large Dutch oven, heat 1/2 cup broth until it bubbles around edges. Add onion and garlic, and cook until onion is translucent, 4 minutes, stirring occasionally. Mix in curry powder until fragrant, 30 seconds. Add cabbage and cook, stirring occasionally, until it wilts, 4 to 5 minutes, adding 1/4 cup water if the pot gets dry before cabbage is limp.

3. Add chickpeas, green beans, cauliflower and potatoes. Pour in remaining 1/2 cup broth and coconut milk. When liquid starts to bubble around edges of the pot, reduce heat and simmer, stirring occasionally, until potatoes are tender and cauliflower is tender-crisp, 15 minutes. Season to taste with sea salt and pepper. To serve, divide curry, including liquid from pot, among 6 soup bowls.

4. If using eggs, discard egg yolks or reserve for another use, and coarsely chop the whites. Sprinkle the whites as garnish over the curry.

Makes 6 servings.

Per serving: 182 calories,4 g total fat (2 g saturated fat), 33 g carbohydrate, 8 g protein, 8 g dietary fiber, 257 mg sodium.

Peppery Spinach Quesadilla

Peppery Spinach Quesadilla

This is a really great, delicious and easy healthy dinner recipe - one that you won't have to stand over the stove all day making. In fact, you will be done in about 15 minutes. There is practically no cooking involved! Plus your kids will actually eat the spinach when prepared this way! For a super healthy version, substitute goat cheese for the mozzarella.

Ingredients:

1 medium package whole wheat soft tortillas
1 package of fresh baby spinach
1 8oz package low-fat mozzarella (for an even healthier recipe, use goat cheese, preferably made from raw organic goat milk)
1 can organic black beans
1 Tbsp black pepper
1 jar veggie salsa of your choice

(As always, for the very healthiest versions of any recipe choose organic content as much as possible.)

Directions:

First, you will heat the beans on medium low heat until they are hot. Preheat your oven to 350 degrees, and lightly coat a cookie sheet or pizza pan with olive oil.

Chop your baby spinach finely.

Get 8 tortillas ready and spoon about 2-3 tbsp of the heated beans on one side of each tortilla. Sprinkle a dash of pepper on the beans, and add a tablespoon or two of the mozzarella cheese.

Place these in the oven, open, for about 8 minutes, or until the cheese is nice and melted. Take them out of the oven and add 1 to 2 tablespoons of spinach to each tortilla.

Fold the tortillas while the cheese is still hot, and cut each one into 4 quarters. You can dip these in the salsa, and they are yummy!

If you love a little spice in your food, sprinkle a dash of cayenne pepper on each quesadilla before you put it in the oven.

Introductory to my blogs

I market products for a health and wellness company, called melaleuca.   I started this blog because ever since I have started marketing for this company I have learned a lot of information about the chemicals that are in our everyday cleaning products. I have four children, and 3 of them have some kind of physical problem.  I, myself have some physical problems.  Two of my children have ADHD. One with ODD.  One with Osler Weber Rendu Disease and he is also developmentally delayed.  I also have high blood pressure and high cholesterol. One of my sons has acne, both him and I wear glasses.  Since I have been marketing with Melaleuca I found out some interesting facts I found out that a lot of my cleaning supplies had toxins in them.  Well, I probably already knew they had toxins in them because if you look at the bottles of cleaning supplies it will list certain toxic ingredients. However, I also learned that company's didn't have to list all their chemicals on their product.  I also  learned that make up even had toxins in it.  Not only from melaleuca, but I also have a link to an article about lead found in lipstick on this site.  So now you're probably wondering what do these toxins have to do with my kids.  Well I also found out that many of these toxins are making our children sick. Toxins that are in our laundry detergent, dish detergent, floor and carpet cleaners, bath soap, aerosol sprays, and the list can keep going.  Children can be extremely sensitive to these toxins, and it may cause them to display ADHD behaviours.  Allergies for products in the home are rarely ever considered when a child is being tested for psychological problems. Our cleaning supplies contain chemicals that have neurotoxins (Definition of neuro from freedictionary.com means indicating a nerve or nervous system). , that cause central nervous systems (CNS) disorders, carconigenics that link to pancreas cancer,  Ethyl Acetate which causes damage to the liver and kidneys in them and the list goes on. I only have taped less than 1% of the chemicals in our house. Now then lets get back to Melaleuca.  All their products are natural.  They care about their customers. They want us to be healthy.  Their products are scientifically proven to be healthier. Their products have no chlorine bleach. Chlorine bleach is linked to cancer. Have you noticed that more people have cancer than 30 years ago.  I'm 40 years old, and I know as a child I didn't hear about people dying of cancer much.  Mostly everyone I knew who died, died of natural causes or in their sleep. Chlorine Bleach is also related to headaches. Headaches my children have had. Melaleuca's products also have no phosphates, and no high alkaline formula's.  Alkaline formula's can burn skin, mouth, and eyes, and they can scratch dishes, and make your glassware cloudy. Their products also contain no fillers, and are concentrated.  They are less expensive than leading store products which contain fillers, and are watered down. Cranberry Chicken Breasts with Wild Rice

Ingredients:

1 16 ounce can whole-berry cranberry sauce (a 16 ounce jar would be a healthier choice and the healthiest choice of all would be homemade cranberry sauce)
2 tablespoons orange juice
2 tablespoons lemon juice
1/2 teaspoon dry mustard
1-1/2 pounds skinless, boneless chicken breasts (preferably free-range organic chicken)
1 (6 ounce) package long grain and wild rice mix
2 tablespoons grated orange rind
1/4 cup chopped green onions

(As always, for the very healthiest versions of any recipe choose organic content as much as possible.)

Directions:

1. Preheat the oven to 350°F.

2. In a medium saucepan over medium heat combine the cranberry sauce, orange juice, lemon juice, and mustard, cooking until hot.

3. Place the chicken in a baking dish, and pour the cranberry sauce over the chicken. Bake, uncovered, for 45 minutes, or until the chicken is done.

4. Meanwhile, cook the wild rice according to the package directions, omitting any oil and salt. When the rice is done, stir in the orange rind and green onion. To serve, place the rice on a plate, and top with the chicken and cranberry.

Serves 4 to 6

Today's Healthy Recipe: Mushroom Barley Soup

Mushroom Barley Soup

This hearty soup features barley, a grain which has a slightly sweet and mild taste. Barley is a good source of fiber and contains the minerals iron and selenium. The pearl barley used in this recipe cooks in about 40 minutes and slowly absorbs the flavor of the carrots, thyme and oregano. Use almost any type of mushroom in this dish, including the button variety found in virtually all food markets. This is a great dish to experiment with different vegetables and whole grains to make the perfect healthful one-pot meal.

Ingredients:

3 Tbsp. olive oil
1 tsp. unsalted butter
1 large onion, chopped
2 medium carrots, peeled and sliced thin (like coins)
1 1/2 lbs. mushrooms, sliced
1/2 cup chopped shallots, including most of green stems
3 Tbsp. dry white cooking wine (optional)
1 tsp. dried thyme
1/2 tsp. dried oregano
5 cups reduced-sodium beef stock
3/4 cup pearl barley
Sea salt to taste
1/2 tsp. freshly ground black pepper
1/2 cup chopped fresh parsley, divided
1 small yellow bell pepper, chopped

Instructions:

1. Heat oil and butter in large pot over high heat. Add onions and carrots. Cook about 2 minutes, stirring frequently. Add mushrooms and shallots. Cook an additional 4 minutes, continuing to stir frequently, until onions and carrots soften and mushrooms wilt.

2. Add wine, thyme and oregano. Reduce heat to low. Stir and scrape browned bits from the bottom, and cook an additional 5 minutes.

3. Stir in stock, barley, salt and pepper. Increase heat and bring to a boil. Reduce heat, cover, and simmer until barley is tender, about 40 minutes. Stir in yellow pepper and 1/3 cup parsley, and simmer for about 3-4 minutes.

4. Garnish with remaining parsley and serve.

Makes 6 servings.

Per serving: 260 calories, 9 g total fat (2 g saturated fat), 34 g carbohydrate, 11 g protein, 6 g dietary fiber, 330 mg sodium.
